The Mira Hong Kong - WHISK, Cuisine Cuisine, Yamm – Paving the Way for More Sustainable F&B Operations

[The Mira Hong Kong - WHISK, Cuisine Cuisine, Yamm was awarded “Green Shop of the Year – Merit” in the Hong Kong Green Shop Alliance Award 2024]

As an ISO 14001-certified business, the Mira Hong Kong prides itself on being one of Hong Kong’s leading dining destinations. Three of its popular restaurants, Yamm, Cuisine Cuisine, and WHISK, have all recently been awarded the Food Made Good 3 Star Sustainability Award (2023 - 2025) by the UK’s Sustainable Restaurant Association, representing the highest grade of compliance with the principles outlined in the UN Sustainable Development Goals.

Supporting Food Waste Conversion

To tackle the carbon footprint of its F&B operations, all dining outlets joined the Hong Kong Government’s pilot scheme in which food waste from restaurants is converted into biogas energy at O-Park 1 station on a daily basis.

Carefully Selected Eco-friendly Ingredients

WHISK, spearheaded by its Culinary Director, Sheldon Fonseca, is not only a modern European restaurant where expert cooking techniques and premium ingredients are whisked into mouth-watering menus inspired by the seasons, it is also dedicated to the traceability of local and consciously sourced MSC-certified seafood and artisan meats.

From grass-fed, nature-led Australian Wagyu to regional French Pigeon, the restaurant collaborates with reputable growers who care about animal welfare, as well as family-owned butchers who share WHISK’s commitment and passion for quality. Vibrantly flavoured signature dishes such as “Roasted Yellow Chicken with 10 Grain Rice” showcase the best of local meat and help promote a biodiversity of starches.

Sustainable Dining Options

To further raise awareness of the importance of choosing the right seafood, both WHISK and Michelin-recommended Cuisine Cuisine at The Mira featured sustainable seafood on their a la carte menu in June 2024 in celebration of the WWF World Ocean Day, and continue to do so on their menus throughout the year.

Both restaurants also offer vegetarian set menus and plant-based alternative dishes available upon request to cater to the growing demand for diverse dietary habits that promote a greener lifestyle.
